Pour 1 litre of water in a saucepan, bring to the boil and pour in the rice with some oil and salt and cook for approx. 30 minutes.
In the meanwhile brown the onions (previously cut into small pieces) and the ham. Put the washed, peeled and chopped carrots in a blender together with the almonds and after, add everything to the onions and the ham. Blend everything with wine, create a cream and add salt and pepper.
When the rice is ready, drain the water and season with oil, then add the cream and the grated orange zest. Garnish with toasted almonds cut into four parts and arrange them like a flower.
